How To Make Creamy Cherry Tomato Pasta With Burrata Cheese
Burrata is the most amazing cheese on the planet (yes, even over Pecorino Romano). It is creamy, soft, and delicate, and the lightness of the cheese elevates even the simplest of dishes.
For this recipe, we used burrata from one of the best cheese factories in Australia, Vannella Cheese. Their artisanal burrata cheese is the perfect addition to my cherry tomato pasta – it takes it to the next level. My cherry tomato pasta uses beautiful fresh ingredients, and the artisanal burrata brings the dish all together and makes it a fresh, creamy delight.
In just 15 minutes or less, this dish will take you straight to Italy. Creamy cherry tomato pasta is simple and easy to make, but trust me when I say it is a dish that will impress. Once you break apart the burrata it beats any pasta dish at a Michelin-star restaurant!

Use Vannella Cheese
Burrata cheese is undoubtedly one of the best cheeses on the planet. For this recipe, we used high-quality artisanal cheese from the Vannella Cheese factory in Australia. When you take a bite of this authentic Italian cheese, it will be like you are back in Italy. The cheese is beautifully packaged in a plastic bag so that even if it accidentally breaks, it won’t touch the water. Burrata is a creamy experience.
Make Sure to Use High-Quality Ingredients
If you can grow your own tomatoes, this is best. If you don’t grow tomatoes, you can also find a shop that sells high-quality, juicy tomatoes. Always use more cherry tomatoes if possible. It is better to have more cherry tomatoes and make leftover sauce than to have dry pasta.
Crush or Slice the Garlic Into the Pan
Crushing your garlic into the pan with a garlic crusher is super quick and easy. It also makes the garlic flavor so much stronger. However, you can also slice the garlic if you would prefer. If you don’t want to use garlic, you can even use onions.
Put Basil In The Sauce
No, I didn’t go crazy! Yes, you should really add basil to the sauce. Typically, for Italian recipes, it is best not to add basil to the sauce as it can ruin the flavor and be overpowering. However, for this recipe, there aren’t many ingredients, so the basil will help add some additional flavors. The tomatoes will be calling for the basil.
How to Make Cherry Tomato Pasta Sauce
There are many ways to make cherry tomato pasta sauce. Some people like to remove the skin, but I think it adds a nice flavor to the dish. While I like tomato skin, I have a trick to make sure the skin does not annoy you. The trick is to place the cherry tomatoes, basil, and garlic into a blender to make it smooth. Blend the tomatoes for about 5-10 seconds. Do not overblend the pasta sauce. If you don’t mind the skin of the tomatoes, you can also keep it whole.
Save Some Pasta Water
When cooking the pasta, be sure to save one or two mugs full of pasta water. This will help the pasta sauce become perfectly creamy. One way to make sure you don’t accidentally drain the pasta water is to use tongs to scoop the pasta out of the pot instead of draining the pot in your sink.
Break Apart the Basil With Your Hands
When you add fresh basil to the pasta, be sure to break the basil apart with your hands. Never cut the basil on a cutting board. If you chop the basil on the cutting board, all of the flavor will be lost on the cutting board.
How to Serve Creamy Cherry Tomato Pasta With Burrata Cheese
To serve this delicious cherry tomato pasta, take your metal tongs and scoop some pasta out. Twirl it into a small nest-like shape and put the pasta on a plate. Place a beautiful basil leaf on top, and add the amazing Vannella burrata on top. Pour a little bit of EVOO over the burrata for a final touch.
Break the burrata, mix the pasta together, and just look at the amazing artisan cream. The burrata is soft and delicious and just melts together with the pasta. Mix the burrata into the pasta with a fork and watch how the burrata takes this pasta dish to the next level.
Creamy Cherry Tomato Pasta With Burrata
Equipment
- knife
- Chopping-board
- Large stainless steel pan
- Garlic crusher
- wooden spoon
- Blender
- large pot
- Mug
- Strainer
- Metal tongs
Ingredients
- 300 grams Spaghetti Quadrati 10.5 oz for two people
- 500 grams Roma cherry tomatoes 17.6 oz
- 2 garlic cloves one per person
- Fresh basil
- EVOO
- Salt and pepper as much as required
- Rock salt
- Pecorino cheese as much as preferred
- High-quality Vannella burrata cheese small burrata, one per plate
Instructions
To Make the Cherry Tomato Sauce
- Cut the cherry tomatoes in half.
- Pour EVOO into the pan, and crush two cloves of garlic into the pan.
- Before the oil gets too hot, add a little bit of water to the pan so that the garlic doesn't burn.
- Stir everything together with your spoon and wait 10 seconds.
- Add the cherry tomatoes to the pan.
- Wait until the juice comes out of the cherry tomatoes. Gently press your wooden spoon to the top of the cherry tomatoes and help the juice come out.
- Add salt and pepper, but not too much, as the pecorino will be salty. Be generous with the pepper.
- Pour the ingredients from the pan into a blender, add a little bit of EVOO, and blend it gently for 10 seconds.
- Add the blended sauce back into the pan.
- Boil the pasta and add a mug of pasta water into the sauce.
To Cook the pasta
- Start boiling water in a large pot and add 1 tablespoon of rock salt.
- Once the water is boiling, add the spaghetti and use the wooden spoon to push the spaghetti in. Follow the cooking instructions on the package.
- Stir the pasta every 2-3 minutes.
- After the pasta is cooked, take the pasta out of the pot, but be sure to keep about 1-2 mugs of pasta water for the sauce.
To Assemble the Dish
- Add the pasta to the sauce in the pan and mix everything together.
- Pour another mug of pasta water into the pan and stir the sauce so that it is fully mixed.
- Toss the sauce and pasta together. When you toss the pasta, it will move and absorb the sauce at the same time.
- The final touch is to break it apart and add some extra fresh basil into the pan. Then, toss everything together again.
- Add some pecorino cheese on top before the burrata. Cut the burrata open and mix everything together.
