ITALIAN SUMMER LUNCH MENU
Summer has finally arrived, and you will all agree with me that during Summer everyone prefers to enjoy fresh and light dishes, to prepare for a quick lunch, to take to the office or to the beach.
Forget all those dishes that need hours to be ready! Let’s be honest… No one would like to cook for so long on hot Summer days.
This is why I created a super fresh, light and easy Italian Summer Lunch Menu, that will definitely make the Summer easier for you!
My Summer Lunch Menu
For this menu I decided to share 3 recipes with you for a 3-courses lunch: an Antipasto that you can prepare even in just 2 minutes; a super easy Pasta Dish that you can make super quickly and finally a Dessert that we all love, but this is a more summery version of the classic one!
ANTIPASTO
Caprese Salad is the classic “made in Italy” dish: mozzarella, tomato and basil for a perfect salad to be enjoyed for a tasty Summer lunch. But remember: the secret of its success is to use quality ingredients!
MAIN DISH
To serve as a main dish, I chose Spaghetti al Pomodoro. This is probably the easiest and quickest Italian pasta recipe that exist! It really takes 10 minutes, and you can’t go wrong!
A SUMMERY DESSERT
Strawberry Tiramisù seems the perfect dessert to finish this Summer menu. It is sweet but not too much, and this tiramisu is quite light and therefore ideal to eat even on hot days.
