Vincenzo’s Tips to Make the Best NEAPOLITAN PAN PIZZA RECIPE
Stretch to fit
Make sure when you stretch your dough, it matches the size of your frying pan. No pizza hanging off the edges please – and nothing too small either!
Smoke Signals Mean Go
If you’ve got a pyrometer, use it to check the heat of your pan. No pyrometer? No worries. When you start seeing smoke from your pan, that’s your sign, it’s showtime.
Crank That Heat
Your electric oven can be likened to your pizza’s tanning bed. Set it to broiler mode, and once it’s glowing red, it’s ready. Preheat close to max, then crank it to full blast (around 400°C) when your pizza’s ready to go in.
Plastic Not Allowed
Never use a frying pan with plastic parts unless you want a melted mess instead of a Pizza Napoletana. Only use pans that can handle the heat!
We Like Spots
To get those beautiful leopard spots, carefully lift your pizza closer to the roof of the oven, right under the broiler, for the final 10 seconds so the top gets closer to the heat. Keep an eye on it and be careful not to burn your hand.

How to Serve Neapolitan Pan Pizza
Pour some extra virgin olive oil on top, add a few fresh basil leaves for the final touch, then slice it up while it’s hot. Fold it, bite it, devour it… and watch it disappear in record time.
