Sometimes cooking feels a bit much. I understand – and I love it – because sometimes even I’m too tired after a big work day to be in the kitchen. If this is your mood then this lazy, 10-minute pasta recipe is exactly what you need. With very little cooking time this dish delivers real Italian flavour without chopping boards, complicated steps, or a sink full of dishes.
The sauce is simply peeled tomatoes pulsed chunky, garlic warmed in EVOO, oregano for depth, then basil added (off the heat) for its beautiful aroma. Toss in your pasta, finish with a generous shower of Pecorino or Parmigiano, and suddenly your low-effort dinner looks and tastes like something straight from an authentic trattoria.

Peeled Tomatoes Always Win
If you want a sauce that tastes fresh in just five minutes, peeled tomatoes are the secret. I used two cans, but one works perfectly if you are cooking for 2-3 people.
I use these because they are the closest thing to fresh Italian tomatoes in a can. You can cook them quickly and they still taste vibrant, or simmer them for hours and they become even richer. You don’t necessarily get the same result from diced tomatoes or most supermarket passata.
Pass on Passata (Unless It’s Homemade)
I do not usually use passata because it is often highly processed. However, if you cannot find good quality peeled tomatoes and you trust the passata you are using, then you should absolutely use it and will still get a beautiful result.
Pasta, Your Choice
For this recipe, I used fresh spinach and ricotta tortellini because they cook in about three minutes and make the dish feel special.
You can also use tagliatelle, ravioli, gnocchi or any fresh egg pasta you love. The key is that it cooks quickly. This is a 10 minute pasta recipe, remember. We are not waiting 12 minutes for dried pasta when fresh pasta gives you a silky texture in half the time.

Garlic Is Not the Star
I used two cloves of garlic, but one is enough if you prefer a lighter flavour. Garlic should add depth and aroma, not dominate the entire dish. If you have followed me for a while, you know my take on this!
Match the Sauce to the Pasta
Because I am using filled pasta, the sauce stays simple. The tortellini already have flavour inside, so the tomato sugo just needs to support it.
If you are using plain pasta like tagliatelle or pappardelle, you can build the sauce a little more. Add tuna, some prawns or even vegetables such as peas, artichokes, beans, or any protein you like. Just make sure it is already cooked so the sauce stays quick and easy.
The Basil Rule
Do not cut basil with a knife. Use your hands. Tearing basil keeps its aroma bright and fresh. A knife bruises the leaves and darkens them, which changes the flavour. Always add basil at the end, with the heat turned off, so it perfumes the sauce instead of cooking away.

How to Serve Lazy Pasta
Start by spooning a generous layer of warm tomato sauce onto the base of a flat plate to create a vibrant bed for the pasta.
Using tongs or even a deep spoon, gently place the tortellini on top of the sauce, arranging them neatly. Be creative with your presentation and let the pasta sit proudly instead of piling it up.
Shower the pasta with freshly grated Pecorino Romano so it melts slightly into the warmth.
Finally, tear fresh basil leaves with your hands and scatter them over the top.
Serve immediately while everything is glossy, hot, and irresistibly fragrant.

Ingredients
- 2 cans Italian peeled tomatoes
- Any fresh egg pasta, I used spinach and ricotta tortellini pasta
- 2 cloves of garlic
- Oregano
- Fresh bunch of basil
- Grated Pecorino Romano or Parmigiano Reggiano
- Extra Virgin Olive Oil, EVOO
- Salt & Pepper
Instructions
- Add the peeled tomatoes to a bowl and blend briefly using a hand blender. Pulse quickly so the texture stays slightly chunky and not too runny, then set aside.
- Place a large frying pan over medium-high heat and pour in a generous amount of EVOO. Crush the garlic directly into the pan and let it cook gently for about 30 seconds until fragrant, adding a small splash of water (if necessary) to prevent burning.
- Pour the blended tomatoes into the pan and stir well. Add dried oregano to your taste and allow the sauce to simmer gently while you cook the pasta.
- Bring a large pot of water to a boil then add 1 tablespoon of sea salt and let it dissolve. Drop in the tortellini and cook for about 3 minutes, or until al dente.
- Turn off the heat under the sauce then tear the basil leaves with your hands, adding them to the pan. Stir gently to combine.
- Using a strainer, transfer the cooked tortellini directly into the sauce. Gently coat each piece so it is evenly covered and move the pan back and forth to help the sauce wrap around the pasta. When making a stuffed pasta like this, avoid aggressive tossing to keep the tortellini intact. You might choose to toss if you use a different pasta shape.
