Do NOT use a blender!

Your hands are the best utensil for crushing the totatoes.

Do NOT cook it

Do not cook your sauce before putting it on a pizza.

Best is a day before

Tomato sauce for pizza is best when made the day prior to using it.

Quality at its finest

A good quality Italian peeled tomato is an absolute MUST.

Equipment

  • Large mixing bowl
  • Your hands! Or a vegetable mill if preferred

Ingredients

  • 2.5 kg Italian peeled tomato, san Marzano
  • 25 grams Salt
  • Handful of fresh basil leaves
  • Extra virgin olive oil, EVOO. Drizzle

Instructions

  • Tomato pizza sauce does not need a blender – so don’t be tempted! Start by filling a mixing bowl with your desired quantity of San Marzano tomatoes.
  • Crush the tomatoes with your hands creating a thick, coarse sauce full of thick tomato pieces.
  • Add salt and continue mixing with your hands by placing your open hand into the tomatoes and then bringing it into a fist once your hand is in the bowl.
  • Repeat this process and turn the bowl around to make sure you mix all of the tomatoes well.
  • Add a handful of fresh basil leaves in your pizza sauce and keep mixing.
  • Finally, add a drizzle of extra virgin olive oil and mix it through too.
  • That’s it, your pizza tomato sauce is ready!

How to serve Tomato Sauce for Pizza

If you’re planning to prepare tomato sauce for pizza. it’s always a good idea to make it a day ahead of time. Allowing the sauce to sit overnight helps the flavours meld together. Creating a more robust and delicious taste. Plus, the fresh basil will have more time to infuse into the tomato. Giving your sauce a more pronounced and aromatic flavour.

Once it’s ready, it can be used as the perfect base for any pizza or focaccia toppings. Spread it over your dough, and then add your favourite toppings, from mozzarella cheese to fresh veggies or meats. The options are endless, and it will provide a tasty and flavourful base that ties all the ingredients together.

    What do you do with the leftover pizza sauce? Can you just keep it refrigerated for later? Do you freeze it? 2.5 kg is too large a quantity for 1-2 pizzas.

      Leftover pizza sauce can be stored for later use either by refrigerating it for up to a week or freezing it for up to three months. To refrigerate, transfer the sauce to an airtight container and label it with the date. Leave some room for expansion. When you are ready to use the sauce, simply bring it back to room temperature after refrigerating or thawing from the freezer.
