How to Make Spaghetti Alla Chitarra

Fresh pasta is a staple of Italian cuisine and is revered for its delicate texture and rich flavor. Vincenzo’s Top Tips To Make Spaghetti Alla Chitarra

Get rid of the stickiness

Keep some extra flour close by and sprinkle it over your hands as you knead the dough to get rid of the excess sticky bits that are likely to be all over them!

Cover it every time you finish

Make sure you cover the remaining fresh pasta dough each time you finish using it to stop it from drying out and also so that it doesn’t continue to rise.

Knead the dough well

Kneading the dough is essential to developing the gluten, which gives the pasta its structure and chewiness.

Rest the dough

After kneading, let the dough rest for at least 30 minutes to allow the gluten to relax and make it easier to roll out.

Use a pasta machine

A pasta machine makes it easy to roll out the pasta dough into thin, even sheets, which is crucial for making Spaghetti alla Chitarra.

Equipment

  • Wooden board for kneading the pasta dough
  • Small plate or bowl
  • knife
  • Pasta making machine

Ingredients

  • 600 grams Flour
  • 6 Eggs

Instructions

  • To make the spaghetti alla chitarra, pour the flour on to your board/table.
  • Make a small-medium size mound using the flour and create a well in the centre.
  • Crack each egg onto the plate, then drop it into the well. This will prevent any unwanted egg shell remnants from getting inside the flour.
  • Whisk the eggs carefully using a fork.
  • Bring the edges of the flour into the centre with the fork, and quickly continue to cover them all the way around. Keep doing this (making sure the egg doesn’t run away!) until all of the eggs have folded into the flour. You will need to use your hands at this point.
  • Begin to mix it together using both hands until the dough for the fresh pasta begins to form.
  • Keep kneading the dough so that it begins to firm up and also smooth out.
  • Cover the fresh pasta dough and let it rest for ½ hour.
  • After ½ hr, check that you are happy with the texture of the dough by pressing down softly on it using both palms.
  • Cut a couple of slices from the main piece – approx. 2-2.5cm thick, and feed them through the largest slot in your fresh pasta making machine. Each time it passes through, fold it together and repeat.
  • Work your way down to the thinner options until you get the smooth consistency required. You might need to sprinkle some added flour on top of the sheet, to prevent it from sticking.
  • It is then time to pass the pasta sheets through the correct option for SPAGHETTI ALLA CHITARRA!

    Used this recipe and techniques to use my new Chitarra my husband gave me for my birthday. First time even having Chitarra Spaghetti and will not be the last. I make fresh pasta regularly and I cannot recommend Chitarra highly enough, especially with Vincenzo’s instructions.

Trade Promotion Terms & Conditions

1. Promoter

The promoter is Vincenzo’s Plate (the “Promoter”), based in Australia.

2. Promotion Period

The promotion commences at 8:00pm AEST on 9th March 2026 and closes at 11:59pm AEST on 16th March, 2026 (“Promotion Period”). Entries received outside this period will not be accepted.

3. Eligibility

Entry is open to residents of Australia aged 18 years or over. Employees of the Promoter and their immediate family members are not eligible to enter.

4. How to Enter

1. To enter the promotion, eligible participants must during the Promotion Period:
2. Pre-order a copy of the book Authentic Italian from any Australian retailer, and
3. Upload proof of purchase (receipt or order confirmation) via the entry form on the Vincenzo’s Plate website.
Each valid receipt submitted will count as one (1) entry into the draw.
The Promoter reserves the right to verify the validity of entries and may request additional proof of purchase if required.
Incomplete, illegible, or fraudulent entries will be deemed invalid.

5. Prize

One (1) winner will receive a one-year supply of Monini Extra Virgin Olive Oil based on average Australian olive oil household consumption of 5.1 litres per year. The prize consists of nine (9) bottles of Monini Extra Virgin Olive Oil (5 x Monini Classico extra virgin olive oil 750mL and 4 x Monini Organic 500ml extra virgin olive oil), delivered to the winner’s nominated Australian address.
The prize is not transferable, exchangeable or redeemable for cash.

6. Prize Draw

The winner will be selected via a random electronic draw conducted by the Promoter on 17th March 2026.

7. Winner Notification

The winner will be notified via the email address provided at entry within 3 business days of the draw.
If the winner does not respond within 14 days, the Promoter reserves the right to conduct a redraw.

8. Delivery of Prize

The prize will be delivered to the winner’s nominated Australian address. Delivery timing and scheduling may vary depending on product availability.

9. Limitation of Liability

To the extent permitted by law, the Promoter is not responsible for:
– Lost, late, incomplete or misdirected entries
– Technical issues affecting entry submission
– Any injury, loss or damage arising from participation in the promotion or acceptance of the prize

10. Privacy

By entering this promotion, entrants agree that their personal information may be collected and used by the Promoter for the purposes of administering this promotion.
Entrants may also opt in to receive marketing communications from the Promoter. Personal information will not be sold or shared with third parties outside the administration of this promotion.

11. General

The Promoter reserves the right to cancel, suspend or modify the promotion if circumstances arise that are outside the Promoter’s control.
