Vincenzo’s Top Tips To Make Seafood Pasta

Use fresh seafood:

Always opt for fresh seafood when making seafood pasta, as it will make a huge difference in the flavor and texture of the dish.

Don’t overcook the seafood:

To avoid making rubbery and tough seafood, it’s important to cook it just until it’s done. Depending on the type of seafood you’re using, this may only take a few minutes.

Add fresh herbs

Fresh herbs like basil, parsley, and cilantro can add a burst of flavor and freshness to seafood pasta. Be sure to add them at the end of the cooking process for maximum flavor.

Serve immediately

For the best results, serve your seafood pasta immediately after cooking. Leaving the seafood in the sauce for too long can cause it to continue cooking and become tough.

Equipment

  • 5L pot
  • Large, deep pan
  • wooden spoon
  • Pasta strainer
  • A set of tongs

Ingredients

  • 600 grams Calamari, cut into small pieces
  • 400 grams King Prawns
  • 200 grams Mussels, Steamed and removed from Shell
  • 6 Eggs
  • 1 kg Spaghetti, Get a good brand please
  • EVOO
  • Parsley
  • Sea Salt
  • 5 L Water

Instructions

  • Add a generous amount of EVOO to the pan on a low heat.
  • When the oil is warm add 600g of calamari and cook for about 15minutes. Stir it every now and then.
  • Beat the eggs in a separate bowl and add a pinch of salt. Also add a pinch of salt to the calamari.
  • Once the water boil add a generous pinch of salt.
  • The start cooking the spaghetti.
  • Now add the prawns and cook them for a couple of minutes, then add the mussels too and stir well
  • Occasionally stir the pasta as it begins to cook. Do this to make sure it cooks perfectly.
  • Now add a few spoons of the flavoured sauce to the boiling water as it gives a nice flavour to the pasta. Every little detail counts.
  • Once the spaghetti are cooked, add it in the saucepan and mix together well. Turn the heat off.
  • Pour the beaten egg mix on the seafood pasta and carefully stir the egg through. Just like you are making normal carbonara, but careful not to scramble the eggs.
  • E ora si mangia, Vincenzo’s Plate….Enjoy!

How to serve Seafood Pasta

To serve your seafood carbonara look as good as it tastes, use a large flat white plate and place a twirl of pasta in the center. Add extra pieces of seafood around the plate for a visually appealing presentation. For an extra pop of color, sprinkle some chopped parsley on top.

      Ciao Melissa! The garnish on top is simply the extra pieces of seafood that were cooked in the pan. Just set a few prawns, mussels, or calamari aside before mixing everything with the pasta. Then place them on top when you serve to make the dish look even more delicious. 😋

Trade Promotion Terms & Conditions

1. Promoter

The promoter is Vincenzo’s Plate (the “Promoter”), based in Australia.

2. Promotion Period

The promotion commences at 8:00pm AEST on 9th March 2026 and closes at 11:59pm AEST on 16th March, 2026 (“Promotion Period”). Entries received outside this period will not be accepted.

3. Eligibility

Entry is open to residents of Australia aged 18 years or over. Employees of the Promoter and their immediate family members are not eligible to enter.

4. How to Enter

1. To enter the promotion, eligible participants must during the Promotion Period:
2. Pre-order a copy of the book Authentic Italian from any Australian retailer, and
3. Upload proof of purchase (receipt or order confirmation) via the entry form on the Vincenzo’s Plate website.
Each valid receipt submitted will count as one (1) entry into the draw.
The Promoter reserves the right to verify the validity of entries and may request additional proof of purchase if required.
Incomplete, illegible, or fraudulent entries will be deemed invalid.

5. Prize

One (1) winner will receive a one-year supply of Monini Extra Virgin Olive Oil based on average Australian olive oil household consumption of 5.1 litres per year. The prize consists of nine (9) bottles of Monini Extra Virgin Olive Oil (5 x Monini Classico extra virgin olive oil 750mL and 4 x Monini Organic 500ml extra virgin olive oil), delivered to the winner’s nominated Australian address.
The prize is not transferable, exchangeable or redeemable for cash.

6. Prize Draw

The winner will be selected via a random electronic draw conducted by the Promoter on 17th March 2026.

7. Winner Notification

The winner will be notified via the email address provided at entry within 3 business days of the draw.
If the winner does not respond within 14 days, the Promoter reserves the right to conduct a redraw.

8. Delivery of Prize

The prize will be delivered to the winner’s nominated Australian address. Delivery timing and scheduling may vary depending on product availability.

9. Limitation of Liability

To the extent permitted by law, the Promoter is not responsible for:
– Lost, late, incomplete or misdirected entries
– Technical issues affecting entry submission
– Any injury, loss or damage arising from participation in the promotion or acceptance of the prize

10. Privacy

By entering this promotion, entrants agree that their personal information may be collected and used by the Promoter for the purposes of administering this promotion.
Entrants may also opt in to receive marketing communications from the Promoter. Personal information will not be sold or shared with third parties outside the administration of this promotion.

11. General

The Promoter reserves the right to cancel, suspend or modify the promotion if circumstances arise that are outside the Promoter’s control.
