How to Make Pumpkin Arancini

Vincenzo’s Top Tips To Make Pumpkin Arancini

Small or Big in size

You can make the Pumpkin Rice balls as small or big as you like..I always make them big because I like to eat a lot.

DON’T get it lumpy

Depending on how many pumpkin arancini you make, you might need to refill the egg and breadcrumbs a few times, making sure they don’t get lumpy.

Make sure the risotto is cold

The key to making arancini is to use cold risotto. This helps the arancini hold their shape and prevents them from falling apart during frying

Serve hot

Arancini are best served hot, so try to serve them as soon as possible after frying for maximum crispiness and flavor.

Equipment

  • Medium size non-stick frypan
  • Deep fryer or 1 x medium pot for frying
  • Whisk or fork
  • flat plate
  • Paper toweling

Ingredients

  • Vincenzo’s Plate Pumpkin & Pancetta Risotto, preferably prepared the day before
  • 3 Eggs, cracked into a bowl
  • Fresh breadcrumbs
  • Fresh block of provolone cheese, cut into cubes
  • Fresh mozzarella, or Fior di Latte NOT store bought shredded
  • Bowl of water
  • Vegetable oil, for frying
Prevent your screen from going dark

Instructions

  • Beat the eggs well in a bowl.
  • Moisten your hands with water and pick up a handful of risotto. Flatten it into the palm of one hand, curving it slightly.
  • Put some cheese into the centre, both provolone and mozzarella, pressing it down a little.
  • Moisten your hand again using the bowl of water and add more risotto on top, covering the cheese and make the mix into a ball.
  • Cup your hands around it making it into a ball and moving it around to make sure it is well rounded and that the ingredients in the middle are well covered.
  • Pour a generous amount of vegetable oil into a pot or deep fryer and put it on the stove at a medium heat.
  • Dip the pumpkin arancini into the egg making sure it is really well coated before dropping it into the breadcrumbs and rolling it around to completely cover it again.
  • Place it on a flat plate with paper towelling at the bottom so the excess crumbs fall off.
  • Repeat 2-6 unti you have used up all of your leftover risotto.
  • You can put the pumpkin arancini balls into the oil when it reaches a temperature of between 130-150 degrees celsius.
  • Fry 1-3 pumpkin arancini at a time (depending on the size of your pot) and they should sizzle as they cook. You should turn them slighty while they are frying to make sure they are cooking right through and the heat is distributed evenly. (This will also help the cheese to melt…mmmm)

How to serve Pumpkin Arancini

You can either present the arancini as a side dish or as an appetizer. A delicious dipping sauce, such as tomato or aioli, can elevate the flavor even more. To add an extra visual appeal, try serving the arancini on a bed of arugula or baby spinach with a drizzle of balsamic glaze.

Trade Promotion Terms & Conditions

1. Promoter

The promoter is Vincenzo’s Plate (the “Promoter”), based in Australia.

2. Promotion Period

The promotion commences at 8:00pm AEST on 9th March 2026 and closes at 11:59pm AEST on 16th March, 2026 (“Promotion Period”). Entries received outside this period will not be accepted.

3. Eligibility

Entry is open to residents of Australia aged 18 years or over. Employees of the Promoter and their immediate family members are not eligible to enter.

4. How to Enter

1. To enter the promotion, eligible participants must during the Promotion Period:
2. Pre-order a copy of the book Authentic Italian from any Australian retailer, and
3. Upload proof of purchase (receipt or order confirmation) via the entry form on the Vincenzo’s Plate website.
Each valid receipt submitted will count as one (1) entry into the draw.
The Promoter reserves the right to verify the validity of entries and may request additional proof of purchase if required.
Incomplete, illegible, or fraudulent entries will be deemed invalid.

5. Prize

One (1) winner will receive a one-year supply of Monini Extra Virgin Olive Oil based on average Australian olive oil household consumption of 5.1 litres per year. The prize consists of nine (9) bottles of Monini Extra Virgin Olive Oil (5 x Monini Classico extra virgin olive oil 750mL and 4 x Monini Organic 500ml extra virgin olive oil), delivered to the winner’s nominated Australian address.
The prize is not transferable, exchangeable or redeemable for cash.

6. Prize Draw

The winner will be selected via a random electronic draw conducted by the Promoter on 17th March 2026.

7. Winner Notification

The winner will be notified via the email address provided at entry within 3 business days of the draw.
If the winner does not respond within 14 days, the Promoter reserves the right to conduct a redraw.

8. Delivery of Prize

The prize will be delivered to the winner’s nominated Australian address. Delivery timing and scheduling may vary depending on product availability.

9. Limitation of Liability

To the extent permitted by law, the Promoter is not responsible for:
– Lost, late, incomplete or misdirected entries
– Technical issues affecting entry submission
– Any injury, loss or damage arising from participation in the promotion or acceptance of the prize

10. Privacy

By entering this promotion, entrants agree that their personal information may be collected and used by the Promoter for the purposes of administering this promotion.
Entrants may also opt in to receive marketing communications from the Promoter. Personal information will not be sold or shared with third parties outside the administration of this promotion.

11. General

The Promoter reserves the right to cancel, suspend or modify the promotion if circumstances arise that are outside the Promoter’s control.
