Vincenzo’s Top Tips To Make Pasta Broccoli and Ricotta

Cook pasta al dente

Firstly, ensure that you cook the pasta al dente, which means it should be cooked until it is firm to the bite. This way, it will hold its shape and have a pleasant texture when combined with the broccoli.

Reserve pasta water

Lastly, before draining the cooked pasta, set aside some of the pasta water. This starchy water can be used to adjust the consistency of the sauce later on if needed. It helps bind the pasta and the sauce together.
