Bruschetta pasta is one of my favourite easy summer meals because it is fresh, light and perfect for those hot days when you do not feel like cooking. If you are craving bruschetta but have no bread, this refreshing pasta salad brings those familiar flavors together with fusilli instead.

Fresh tomatoes, basil, garlic and extra virgin olive oil create a beautifully juicy dressing without needing to cook a sauce. The only ingredient that goes on the stove is the pasta, so you can have the entire dish ready in around 15 minutes using simple ingredients you may already have at home. It is also completely vegetarian, with no Parmigiano or Pecorino needed.

The finishing touch is toasted breadcrumbs with garlic and parsley, known in Sicily as muddica atturrata. Once considered the “poor man’s cheese,” these golden crumbs bring flavour and an irresistible crunch that makes this pasta truly special.

Although bruschetta pasta is wonderfully simple, the small details make all the difference. From cutting the tomatoes directly over the bowl to preserve every drop of juice to tearing the basil by hand, I am going to show you how to bring out the best in every ingredient. For this recipe, the chopping board is officially off limits!

Fresh Is Best

Tomatoes and basil are the stars of this bruschetta pasta, so choose the freshest and most fragrant ingredients you can find. Look for ripe tomatoes that feel heavy and juicy, along with bright green basil leaves that release their beautiful aroma as soon as you tear them.

Get Twisted with Fusilli

Fusilli is ideal for bruschetta pasta because its twists and curves trap the tomato juices, extra virgin olive oil, garlic and tiny pieces of basil. Each spiral becomes coated in the fresh dressing, so every forkful delivers all the flavors of bruschetta.

No Cheese? No Parm-blem!

There is no Parmigiano Reggiano or Pecorino in this recipe. Because the cheese’s strong, salty flavors would overpower the freshness of the tomatoes and basil. Instead, we finish the pasta with crunchy toasted breadcrumbs, traditionally known as the poor man’s Parmigiano. In the past, families who could not afford cheese would toast stale bread and use the crumbs to add texture and flavor to pasta.

Season the breadcrumbs with a pinch of salt if needed. If you have any left over, place them in a sealed bag or airtight container. Keep them in the fridge, where they should remain fresh for several weeks.

Panko to the Rescue

Panko breadcrumbs are a convenient substitute and will still create a light, crispy topping. However, for a more traditional Mediterranean flavor, make your own breadcrumbs using toasted stale bread. It is a wonderful way to prevent food waste while giving the finished pasta a deeper, more rustic crunch.

Al Dente Is Always the Answer

Nobody wants soft, mushy pasta in a bruschetta pasta. Cook the fusilli until al dente, or drain it about one minute before the cooking time stated on the packet. The pasta will continue absorbing the tomato juices as everything rests. While overcooked fusilli may soften further and break apart when mixed.

Keep Every Drop in the Bowl

Forget the chopping board for this recipe. Hold each tomato carefully over the mixing bowl and cut it into small pieces. So every drop of its precious juice falls into the dish. That juice is liquid gold because it blends with the extra virgin olive oil, garlic and basil to create the fresh sauce.

My whole family follows this technique because leaving those delicious juices on the chopping board would be such a waste. Once the tomatoes are prepared, let them rest for 10-30 minutes so they release even more liquid and develop a richer flavor.

Garlic: Crush It or Keep It Chunky

You can crush the garlic for a smoother flavor throughout the tomato mixture or carefully slice it into small pieces directly over the bowl. Thin garlic shavings provide little bursts of flavor, which many Italians enjoy. If you prefer something gentler, crush the clove or use slightly less. But do not leave it out completely because garlic is what gives bruschetta its savory bite.

Be Generous with the EVOO

Extra virgin olive oil is essential because it brings the tomatoes, basil and garlic together while creating the dressing for the pasta. Use a good-quality oil and do not be afraid to add it generously to both the tomato mixture and the finished fusilli.

How to Serve Bruschetta Pasta

Bruschetta pasta is best served cold, giving the fusilli time to soak up the fresh tomato juices, garlic and extra virgin olive oil. Spoon it generously into a serving bowl, making sure every portion has plenty of juicy tomatoes nestled between the pasta spirals.

Finish with fresh basil leaves and a generous shower of golden toasted breadcrumbs. The contrast between the cool, flavorful pasta and the savory crunch of the breadcrumbs makes this pasta difficult to stop eating.

This fresh and easy bruschetta pasta brings all the flavors of summer together in one bowl. Al dente fusilli is tossed with juicy tomatoes, garlic, fragrant basil and extra virgin olive oil, then finished with golden garlic and parsley breadcrumbs for a beautiful crunch. If you are craving bruschetta but have no bread, this refreshing vegetarian dish is the perfect alternative and takes only 15 minutes to prepare.

  • Large pan
  • Garlic crusher

Ingredients

  • 300 g / 10.58oz fusilli
  • 4 fresh tomatoes
  • 2 garlic cloves
  • 1 bunch fresh basil
  • Chopped fresh parsley
  • Extra virgin olive oil, EVOO
  • Salt and pepper
  • 10 tbsp toasted breadcrumbs, toasted in step 2
  • Chili flakes, optional

Instructions

  • Heat a large pan over medium-low heat and add 4-5 tablespoons of EVOO. Add one crushed garlic clove and cook gently for about 30 seconds, being careful not to burn it.
  • Stir in the breadcrumbs, chopped parsley and chili flakes, if using. Toss continuously until the breadcrumbs are golden brown and crisp, then transfer them to a bowl and set aside.
  • Bring a large pot of water to the boil and add one tbsp of sea salt. Add the fusilli and cook for approximately 10 minutes, or according to the packet instructions, until al dente. Stir the pasta at least three times during the first 2-3 minutes to prevent it from sticking together.
  • While the pasta cooks, place a large bowl on your work surface. Hold each tomato over the bowl, remove the green top part and carefully cut it into small, bite-sized pieces using a paring knife. Allow all the delicious tomato juices to fall directly into the bowl.
  • Pour at least 5 tbsp of EVOO over the tomatoes. Add the remaining garlic clove, either thinly sliced or crushed, depending on how strong you would like the garlic flavor to be.
  • Tear the basil leaves directly into the bowl, then season with salt and pepper to taste. Mix everything gently using your hands or a wooden spoon, then leave the tomatoes to rest for at least 10 minutes.
  • Once the fusilli is al dente, drain it well and transfer it to a separate large bowl. Drizzle with a little extra virgin olive oil and stir gently to prevent the pasta from sticking. Allow it to cool to at least room temperature.
  • Add the cooled fusilli to the tomato and oil mixture and toss gently until every spiral is coated in the tomato juices, garlic and extra virgin olive oil. Transfer the bruschetta pasta to a serving bowl, then finish with a generous amount of the golden toasted breadcrumbs before serving.

You can leave out the breadcrumbs, but you will miss the savory crunch that makes this recipe special. If you do not have homemade toasted breadcrumbs, panko is a convenient alternative.
