Where to Find the Best Carbonara in Rome

Rome, the eternal city, is known for its stunning architecture, rich history, and of course, its delicious food. One of the most beloved dishes in Rome is carbonara. It is a creamy pasta dish made with eggs, cheese, guanciale (pork cheek), and black pepper. And it just happens to be one of my favourites!

While carbonara can be found on most menus in Rome and the basics of the recipe are the same, not all carbonaras are cooked equal. Trust me, I should know! Afterall, I started the #carbonararevolution. I’m Vincenzo, food enthusiast and Italian food ambassador at Vincenzo’s Plate, and today I’m taking you on a tour through the streets of Rome. I’ll help you find the best carbonara in Rome.

I’ve compiled a list of some of the most delicious-rated restaurants and trattorias that serve this iconic dish. Whether you’re a first-time visitor or a seasoned traveler at Vincenzo’s Plate, these spots are sure to satisfy your carbonara cravings. And no they absolutely DO NOT USE CREAM!

Maritozzo Rosso Kitchen Lab

Just a 2-min walk from away from Santa Maria in Trastevere, Maritozzo Rosso is a funky hidden gem that is not to be missed. This unassuming hole in the wall serves up some of the best traditional Roman pasta in the city.

The restaurant’s carbonara is a standout dish, made with eggs that contain a vibrant, rich orange-red yolk. The secret? Maritozzo Rosso sources their eggs from a supplier whose chickens have a fondness for carrots.

Despite being a classic dish known for its heavy creaminess, Maritozzo Rosso’s carbonara is surprisingly light and delicate. Yet not lacking in just-enough delicious, authentic creaminess. Topped with the perfect amount of pecorino romano, it’s a true masterpiece of a bite.

 I couldn’t help but notice the approving nods and satisfied smiles of the diners around me. It was clear that Maritozzo Rosso’s carbonara has won over the hearts of many, and rightfully so.

Don’t miss out on the chance to savor this unforgettable carbonara. When in Rome, make sure Maritozzo Rosso is one of your pasta stops.

Roscioli Salumeria

As an Italian food critic, I can confidently say that Roscioli Salumeria is a true gem in the heart of Rome. Starting as a humble bakery in 1970, the establishment flourished into a grocery store and then later added a café, where you can now enjoy not only some of the best carbonara in Rome, but perhaps in your life!

What sets Roscioli Salumeria’s carbonara apart is the use of fresh ingredients sourced right from their own grocery shelves. The dish itself is a sight to behold, with the creamy sauce enveloping the thick, perfectly al dente pasta. The aroma of the large chunks of guanciale is enough to make your mouth water and have you craving your first bite.

What makes this carbonara truly stand out is the unique twist on the classic recipe. The chunks of guanciale are cooked to crispy perfection, adding a delicious crunch to the dish that is unexpected and completely delightful. With the cheese and pepper, it is just so good! As someone who has tasted countless carbonara dishes in my life, I can confidently say that Roscioli Salumeria’s take on this classic dish is a must-try when visiting Rome.

Che Pasta! Pasta Bar

On my hunt for the best carbonara in Rome, Che Pasta was one of my last stops. Che Pasta is a take-out restaurant that caught my attention with its straightforward yet delicious menu of homemade pasta dishes and seafood options.

It is located just a short 3-minute walk from the popular (and stunning) Piazza Navona, making it the perfect spot to grab some carry-out and enjoy a stunning view.

The two talented chefs behind the operation, Luka and Eduardo, graciously invited me behind the scenes. I have to say, it was a nothing less than a deliciously great experience.

As this was a “take-out” experience, I decided to take my carbonara to the nearby Fiumi Fountain (Fontana dei Fiumi) to enjoy it. And I have to say, it was the perfect pairing. The smell alone was enough to draw you in, and the taste was nothing less than wow-worthy.

While savouring the aroma of this beautiful carbonara, I couldn’t wait to take my first bite. And let me tell you, it did not disappoint. The pasta was al dente yet with a softer consistency that melted in my mouth. The creaminess of the sauce and the flavor was nothing short of exceptional. It’s no wonder that this pasta is a must-try for anyone visiting Rome.

    I stumbled across your fun, informative videos during the first Corona lockdown and have been a big fan ever since. Your instructions are understandable, simple and – above all – always authentic.

    I now go to Rome at least once a year to enjoy “the big 4” there; Gricia, Cacio e Pepe, Carbonara, and Amatriciana. I have to say, I have never been disappointed by a single restaurant in Rome and I visit them all over the place.

    I really liked Da Sur Olimpia al Drago in the Trastevere. Great food all round, but their cacio e pepe, and their carbonara are incredible! Also worth a try is Supplizio near Campo de’ Fiori. They specialise in suppli (obviously), but they do a cacio e pepe one which is incredible!

    If you find yourself in Tuscany anytime, head over to Montopoli and give L’Eremita a try, or even better still, Nonna Rosetta’s famous Tuscan Lasagne at Agriturismo Bramasole e Ginestra!

    Your recepy for crabonara is interesting but the erving is 0 (zero ). It is for 330 gr of pasta.

    I guess you are speaking about 3 servings. Is this correct?

    I am more interested in proportion pasta/pecorino/guaciale.

      Ciao Guy! Thank you for your comment! Typically, for 3 servings, a good ratio would be around 100g of pasta per person, with about 25-30g of Pecorino and 50-60g of guanciale per serving, depending on your taste.
