How to Make Peppers and Eggs
Peppers and eggs (Pipindun e ova) is a classic 2-ingredient dish which can be served as a starter, lunch or even for breakfast! Moreover, the flavours of fried peppers mixed with egg and the very best extra virgin olive oil enjoyed with crisp, homemade Italian bread, will transport you to a hearty meal in the Italian mountainside.
Additionally, this dish has been enjoyed for generations, which is why I chose to make it with my Dad on a recent trip to Lake Scanno. The perfect company and setting made it taste even better!

Vincenzo’s Top Tips To Make Peppers and Eggs
Avoid them from burning!
If the peppers start to stick to the pan, add some more oil to make sure they don’t burn.
Stir occasionally
This is to make sure the peppers are moist with oil and just leave it to simmer
Nice and fluffy
We need eggs become fluffy and make sure to mix in well with the peppers. Mix it rigorously!
Peppers and Eggs
Equipment
- 1 Non-stick flat saucepan Medium size
- 1 wooden spoon
- 1 Small bowl
Ingredients
- 2 Peppers Capsicums
- 4 pieces Eggs
- Extra virgin olive oil EVOO
- Salt
- Fresh truffle Optional
- Pepper Optional
Instructions
- To make the peppers and eggs, start by cutting the peppers in half.
- Remove the seeds and then cut them into strips.
- Put your pan on medium heat and add a generous amount of extra virgin olive oil.
- Once this has started to warm, add in the strips of peppers and stir using a wooden spoon.
- Leave this to simmer, stirring occasionally to make sure the peppers are moist with oil.
- While this is simmering, in a small bowl, crack the four eggs. Sprinkle a touch of salt into the bowl, and beat well using a fork.
- Once the peppers have softened, pour the egg mix into the pan and leave for 5-7 seconds. Then, mix rigorously using a wooden spoon. The eggs will start to become fluffy and mix in well with the peppers.
- Leave for another 5-7 seconds and repeat until the egg is cooked through.

After preparing your tasty dish, it’s time to serve it up and enjoy! Furthermore, one simple option is to transfer individual portions onto plates. And serve with a slice of fresh bread. Additionally, for an extra special touch, add some fresh truffle or truffle oil on top before devouring.
If you’re looking for an alternative way to serve this dish. Consider toasting slices of fresh bread and cutting them into small pieces. Lastly, add a spoonful of peppers and eggs on top of each piece and serve on a long wooden paddle.
This option makes for a delicious antipasto dish that’s perfect for sharing with family and friends.
